Transcoding Options FAQ. When you start a stream, Twitch may transform your broadcast into multiple quality formats to meet the needs of devices and audiences around the world. These quality options are called transcodes. Not everyone has the bandwidth to support a 1080p60 broadcast, and network conditions can change over time.
Content Classification Labels can be added to your stream within the Edit Stream Info panel in Stream Manager. Visit Stream Manager within your Creator Dashboard. Click Edit Stream Info. If this panel is not added to your Stream Manager layout, add it by clicking the drop-down menu in the top left corner, and selecting Edit Stream Manager Panels.

The original VOD's don't stay longer than 6 weeks as far as I know, But highlight should stay forever. If not then I'd contact Twitch support. Download them, put them in cloud storage I guess. Mine were glitched for a bit so I had VODS from like 2 years ago, but Twitch fixed it last month :)
